Spices are use daily for flavoring our foods. They make things taste better. They also have been used over the centuries for pharmaceutical benefits. Be this to ease joint pains, improving blood circulation or making you feel more energetic, spices are more than just taste. Man traveled to distant lands learning of these spices taking samples of the spice back to his homelands. The demands and trade grew from simple salts to sugar, but spices go far beyond this. They where valued gifts and kept locked safe from others. Early America kept spices in toteware to keep them fresh and locked away. Here we explore the spices, for health, Barbecue rubs, poultry, pork, fish and more. While we will include traditional spices used along the cattle drives, like the open prairies life too is adventurist, so we will share some of cookies knowledge of spices. 

As for making good BBQ it starts understanding how you want the finish of great taste to be. Some like food mild, others with some real bite. We can accomplish this through several techniques be it in a marinade, as a rub or using a sauce. Adding one thing or another seems to be each others special secret: Ginger, Vinegar, Molasses, Ketchup, Mustard, brown sugar, and such. Some sauces should be runny while others think but not all barbecue needs a marinade or a sauce. Some just need a good rub.
